Instructions
Step 1: Prepare Your Ingredients
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch baking pan (or line it with parchment paper).
- Gather all your ingredients so you can work smoothly.
Step 2: Make the Cake Batter
- Cream the butter and sugar – In a large bowl, beat the softened butter and sugar together until light and fluffy. This helps create a tender cake texture.
- Add the eggs & vanilla – Mix in one egg at a time, then add the vanilla extract.
- Combine dry ingredients – In a separate bowl, whisk together the flour, baking powder, and salt.
- Alternate adding dry ingredients & buttermilk – Slowly add the flour mixture, alternating with buttermilk, until just combined. Do not overmix – this keeps the cake soft and fluffy!
- Gently fold in the raspberries – Use a spatula to carefully mix in the raspberries.
Step 3: Make the Streusel Topping
- In a small bowl, mix brown sugar, flour, cinnamon, and cold butter.
- Use a fork or your fingers to crumble the butter into the mixture until it resembles coarse crumbs.
Step 4: Assemble & Bake
- Pour the batter into the prepared pan, spreading it evenly.
- Sprinkle the streusel topping generously over the batter.
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.
Step 5: Optional Glaze
- Whisk together powdered sugar and milk (or lemon juice).
- Drizzle over the cooled cake for an extra touch of sweetness!
