  • Total Time: 50 min
  • Yield: 8 servings 1x

Ingredients

Scale

For the Cake Batter:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup buttermilk
  • 1 1/2 cups fresh raspberries (or frozen, thawed)

For the Streusel Topping:

  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cold unsalted butter, cubed
  • 1 teaspoon cinnamon

For the Optional Glaze:

  • 1/2 cup powdered sugar
  • 12 tablespoons milk or lemon juice

Instructions

Step 1: Prepare Your Ingredients

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9-inch baking pan (or line it with parchment paper).
  • Gather all your ingredients so you can work smoothly.

Step 2: Make the Cake Batter

  1. Cream the butter and sugar – In a large bowl, beat the softened butter and sugar together until light and fluffy. This helps create a tender cake texture.
  2. Add the eggs & vanilla – Mix in one egg at a time, then add the vanilla extract.
  3. Combine dry ingredients – In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Alternate adding dry ingredients & buttermilk – Slowly add the flour mixture, alternating with buttermilk, until just combined. Do not overmix – this keeps the cake soft and fluffy!
  5. Gently fold in the raspberries – Use a spatula to carefully mix in the raspberries.

Step 3: Make the Streusel Topping

  1. In a small bowl, mix brown sugar, flour, cinnamon, and cold butter.
  2. Use a fork or your fingers to crumble the butter into the mixture until it resembles coarse crumbs.

Step 4: Assemble & Bake

  1. Pour the batter into the prepared pan, spreading it evenly.
  2. Sprinkle the streusel topping generously over the batter.
  3. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  4. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack.

Step 5: Optional Glaze

  • Whisk together powdered sugar and milk (or lemon juice).
  • Drizzle over the cooled cake for an extra touch of sweetness!
