Instructions
1. Preheat & Prep
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper to prevent sticking.
2. Mix the Dry Ingredients
- In a medium bowl, whisk together:
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
3. Cream the Butter & Sugar
- In a large mixing bowl, beat together:
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar (for extra chewiness)
- Beat until light and fluffy (about 2 minutes).
4. Add the Wet Ingredients
- Mix in:
- 1 large egg
- 1 teaspoon vanilla extract
- Beat until fully combined.
5. Fold in the Fruity Pebbles & Flour Mixture
- Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
- Gently fold in:
- 1 1/2 cups Fruity Pebbles cereal
- Be careful not to overmix, as this can make the cookies dense.
6. Scoop & Bake
- Using a cookie scoop, drop rounded tablespoons onto the prepared baking sheet.
- Bake for 8-10 minutes, until the edges are lightly golden.
- Let the cookies cool for 5 minutes before transferring to a wire rack.
