Instructions

Step 1: Prepare the Crust

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix 1 ½ cups crushed graham crackers, ¼ cup melted butter, and 2 tablespoons sugar until well combined.
  3. Press the mixture firmly into a 9-inch pie pan, ensuring an even layer.
  4. Bake for 8-10 minutes, then let it cool completely before adding the filling.

Tip: If you prefer a more decadent base, try using an Oreo crust like the one in this chocolate cherry cheesecake.

Step 2: Make the Chocolate Filling

  1. In a saucepan over low heat, warm 1 cup heavy cream and ½ cup whole milk until hot but not boiling.
  2. Add 1 cup dark chocolate (chopped) or ½ cup unsweetened cocoa powder and stir until smooth.
  3. In a separate bowl, whisk ¾ cup granulated sugar, 3 large eggs, 1 teaspoon vanilla extract, and ¼ teaspoon salt.
  4. Slowly pour the warm chocolate mixture into the egg mixture, whisking constantly.
  5. Strain the mixture through a fine-mesh sieve for an ultra-smooth texture.

Caution: Do not overheat the chocolate, or it may seize up!
